    So I was a chef in the Air Force...the nice thing about the Air Force is we actually cooked, not just reheated food like the Marines seem to enjoy...yucky

    make no mistakes I love Marines

    Anyway, after battling back out of anxiety and depression I am back to cooking so I thought I would share my simple meals here for the tongue and the heart :slight_smile:

    Steak and Brandy Gravy with Garlic Artichoke

    Tonight's culinary attack

    2 - 8 oz petite tenderloin steaks bought from our local non-GMO, non-hormone agricultural college program
    2 - medium sized artichokes

    Artichoke

    Steam in a pot for 40-45 minutes with a touch of butter over the top. Before cooking, garlic goes in between the leaves

    Steak

    Hot pan with a bit of EVOO
    Tenderize steaks and top with dry sage, salt, pepper, cumin and onion powder
    Mince garlic cloves and dice onions
    Brown the onions and garlic - After brown, remove the onions and garlic from pan and make them into a bed on the plate
    Sear steak on all sides and cook to preferred doneness - add butter to oil and baste steaks while they cook
    Remove steaks to rest

    Gravy

    Deglaze pan with brandy
    Reduce slightly until brandy is deep brown
    Drizzle brandy over steaks on top of onion bed

    Serve artichoke with a little bowl of butter

    Just wondering, is it a waste to use EVOO on hot pans? Just wondering.

    Some would say EVOO is a waste. Others would say it's not ideal (too low a smoke point.) Although in recent months I've used it a lot as a cooking oil. A local drug store has really good sales on one brand every so often, and I stock up. It isn't the best EVOO, but it's a great deal. It's not as cheap as really cheap cooking oil, but I feel more comfortable with it from a health perspective than I do other common cooking oils. Disclaimer: I generally keep temperatures fairly low. I aim for gentle saute, not sear. If high heat was needed, I'd probably turn to something else.

    I have great success with it. I will use oil then after the steak is turned I will add butter to the oil

    Yum, seems tasty! I don't like olive oil though... :stuck_out_tongue_closed_eyes: I love artichokes, and those sound really yummy!

    What do you pair it with for carbs? Maybe baked potatoes? :slight_smile:

    Potato is a good choice...very earthy and comforting to go with a steak

    My recipes? Tuna casserole lol. Cook 1.5 cups of macaroni, add a can of tuna and a can of cream of mushrooms, a cooked chopped carrot, cooked green peas, perhaps some cooked onions and celery (microwave all the veggies to cook them), cover with cheddar and bake for half an hour. Whew, that was a big recipe. :wink:
