My girlfriend is coming over this week for lunch. I have no idea what to make! Nothing that will take too long, please. I'm an okay cook but not fabulous.

What about making some burgers? I'm not sure if you have a grill, but you can grill them on a stove instead. You can just buy ground beef or turkey and form the patties, or get them pre-made. Just cut up a tomato or two, get a couple lettuce leaves, etc. You can also get some frozen french fries as well and heat them in the oven.

    Hope this helps!

What's too long? One hour? Two hours?

Nothing that takes longer than an hour or so. I work mornings so I can't start cooking beforehand.

I think I'll do burgers with a side of chips.

    Chipotle chicken Is pretty easy.
You can buy the seasoning pre mixed an just sprinkle it on some nice boneless breasts, then bake at 350 till done.
Make some rice while they are baking, and some Guacamole.
when its all done, put a circular blob of rice in the center of the plate and push a hole in it like you would for gravy in mash taters, fill the hole with the guacamole. slice the breast in to thin strips and place around the plate, from the rice out to the edge.. Done.
less than an hour and it looks and tastes like you knew what you were doing,.

What about tacos? Ground beef, taco mix. Just brown the beef on the stove add the mix with water, takes less than half an hour.

Buy some shells or tortillas, taco sauce, cheese. Easy!

Chipotle tastes like something died in my mouth.

    Tacos might work.
