Sooooo... I got to thinking on the "why we hate the south post" and there are many reasons why I love the south but definitely up there is our cuisine and most importantly our barbecue. But the real question is how do you like your bbq? As for me, I'm a real sucker for NC vinegar based sauce, just sayin.
Oh boy. Just a nice dry rub on brisket, followed by a nice and long smoking session. Mesquite, pecan, or oak are best. Serve it with beans, slaw, and white bread. Speaking of which, reminds me I gotta prepare everything for our Fourth of July cookout.
I lived in Kansas City for 2 years a while back, and learned that I absolutely friggin' *love* KC style ribs (pork or beef...or brisket or burnt ends), with a spicy, non-sweet sauce.
I'm from southeastern NC. The vinegar and random parts from the pig can't be beat. The difference with the western style is that they use a particular part of the pig. It's good, don't get me wrong, but it's a whole different thing, bigger than the difference between beef and pork. I love both, but I must distinguish between them as separate universes of flavor. The western style is, I think, "Lexington style," as we call it here. I'm not going to say not to eat it because it is excellent cooking, but it ain't from my upbringing.
I don't really care how the BBQ is done or what goes on it as long as it's good and satisfies my stomach.
My favorite BBQ sauce has to be Sweet Baby Rays... I like a sweet and smokey BBQ, with a nice crisp light char but moist inside
