Does telling the doctor I'm bi after being asked about my sex life count as coming out to someone?

Yes it counts as coming out but at the same time is it something the doctor really needs to know?

It was a question I questioned to myself once I'd left. I found it odd but just accepted it.

I suppose, it does, yes. I've never told my doctor my sexuality, however. I've been asked if I'm sexually active, but the gender I'm attracted to has never come up. I don't consider it something my doctor needs to know.

Well to me, considering the doctor wouldn't be really be under the list of 'important' people to come out to, it wouldn't count for me because they could be asking because it's their job..?

Then on the other side, you don't really need to come out if you don't see any reason to. Just be you and be proud of who you are. (&&&)

Absolutely. And yes, the doctor is one of the important people to come out to, because they can't advise you optimally on health issues unless they understand the potential health issues you're apt to face.
