Holiday recipes?

    Does anyone have any good (and failproof) recipes appropriate for the holidays? I'm having a holiday open house this year. My first one. I'm thinking fingerfoods and desserts.

    im not sure what you mean but no party/buffet etc. is complete without a hedgehog; put cubes of cheese on cocktail sticks and put them into a big ball of scrunched up tinfoil. flatten one side for balance.

    That sounds like something my daycare kids would love and then probably poke eachother with the toothpicks afterward. lol

    Baklava! its like the easiest dessert to make if you are well versed in the ways of phyllo dough.

    As for finger food, spinach pies, mini quiches? i dunno.

    Oreo Dirt Cake.

    It's a simple recipe, and is my favorite dessert when the holiday's come around! My cousin makes it, so this link may be a bit different than what I'm thinking of. But, you get the general idea. (The instructions say to be creative by putting the dessert into a clay pot, you don't have to.)

    Chestnuts cake :

    For the cake you need :
    A can of chestnut mash (2 pounds)
    Butter 150 g
    Dark chocolate 150 g
    sugar 125 g
    a little cup of coffee

    For the icing you need :
    1 table spoon of butter
    100 g of dark chocolate
    2 table spoons of icing sugar

    Melt the chocolate until you have a cream.
    Put the chestnut mash in a bowl, add the butter, the melted chocolate, the sugar and the coffee. Mix with a mixer until you have a soft paste (at least 5 min, but I usualy do 10)
    Put it in a mold ( a round one if you want the shape of a cake, a long one if you want a log shape) and put it in the fridge for at least 12 hours.
    Beware, you need to put it in a hard mold, not a silicone one !
    Remove from the mold at the last minute.

    For the icing :
    Melt the chocolate with a table spoon of water, the butter and the icing sugar. When you have a cream, put it on the top of the cake and serve immediatly.

    You can decorate with icing sugar and enjoy :slight_smile:

    This is my favourite recipe ever! I'm making it tonight to take for a supper after my school prize giving.

    Peppermint Chocolate Truffles

    Ingredients:
    2 pkts chocolate thins (or similar biscuits)
    1 pkt oddfellows (or other hard mints, they need to go powdery when crushed)
    1 tin condensed milk
    100g butter
    coconut

    Crush chocolate thins in a plastic bag using a rolling pin, or use knife blade in food processor.

    Crush oddfellows, I do this by putting them on a plastic bag under a towel and hit them with a hammer until they break up into about quarters and then put them in the food processor until they are powdery (this is the hardest part becasue they are really hard to crush.)

    Malt butter and mix with condensed milk.

    Stir all the ingredients together. Roll into small balls. if mixture is too wet to roll, chill mixture in fridge first. Roll balls in coconut. Store in Fridge.

    YUMMY!!!

    I see that we are well-versed in desserts here on EC. Here is an awesome one for peanut butter fudge candy.

    3 cups sugar
    2/3 cup Evaporated milk
    1 stick margarine

    Combine in medium sauce pan
    Cook over medium heat, stirring constantly after starting to boil.
    Continue rolling boil for 5 minutes.

    In large mixing bowl:
    Combine: 1 cup peanut butter
    1 7 ounce jar of marshmallow creme
    with sauce pan ingredients

    Mix with mixer
    Add 1 teaspoon vanilla flavoring

    Mix and pour into 13 x 9 pan
    Let cool- then cut into squares

    Just to let you know, it will be soft and moist. My girlfriend and I made it for Thanksgiving and she freaked out because it was soft; she thought we had messed something up.

    Whenever my family has a party, it seems we have a bunch of meat. Here are some suggestions though.

    1) Meatballs
    We make ours by getting a big jar of jelly and melting it, then mixing it with 2 jars of Heinz chili sauce. Pour over meatballs in a crock pot and heat them up. Delicious and easy.

    2) Taco Dip
    We never have leftovers. Brown 1 lb sausage, 1 lb hamburger. Combine with a regular sized jar of salsa and block of velveeta cheese. Microwave and mix together, serve with tostitos.

    3) Lil' smokies are usually a hit too.

    My family eats way too much meat!
