Diabetic desserts

    My boyfriend is diabetic and his birthday was about a month ago.
    Well, I just recently found out that his mother knowingly made a cake that he couldn't eat. His relationship with his mother and family in general is pretty terrible. But back on topic...

    So I, being the loving boyfriend that I am, have decided to make him a cake that he can eat.
    But I'm having trouble... I can't find any diabetes friendly recipes. I've googled them but none of them are easy. Not that I'm looking for a super simple recipe, but something with less than 82983749827398498243 steps would be fantastic.
    Anybody have any helpful sources?

    Cake Central has a huge recipe database. I've never tried any of their diabetic recipes, but most of them sound pretty solid from a baking science perspective.

    Hmm... what if you tried something besides a cake? I understand the significance of a birthday cake, yeah, but it might be cute to do something unexpected?

    I don't know the first thing about diabetes, but I have plenty of vegan friends and they've introduced me to a host of new recipes I would have never even dreamt of making. I'm sure your boyfriend would appreciate the effort even if it wasn't a cake per se?

    I found these. I don't think I can link the site, but I can copy and paste the recipes.

    Apple And Carrot Cake Recipe Ingredients :
    2 cup Whole wheat flour self-rising
    1/2 cup Margarine
    1 tsp Cinnamon
    1 cup Walnuts, chopped
    2/3 cup Raisins
    2 cup Dessert apples, peeled cored grated
    1 cup Carrot, grated
    Grated peel of 1 orange
    2 large Eggs, *
    4 tbsp Fresh orange juice




    Apple And Carrot Cake Recipe Instructions :
    Line the base and grease of a loaf pan with 4 cup capcity. Preheat
    the oven to 350 degrees. Place the flour in a bowl and mix well, then
    cut in the margarine and stir in the cinnamon. Stir in the walnuts,
    raisins, apples and carrot. Add the orange peel, eggs and juice, then
    beat well until thoroughly combined. Spoon the mixture into the
    prepared pan, smooth the top and bake for about 1 1/4 hours, or until
    the cake is well risen and firm to touch. Turn out on a wire rack.




    Diabetic Cheese Cake Recipe Ingredients :
    2/3 cup cottage cheese
    1/3 cup cold water
    1/2 tsp vanilla
    1/2 cup blueberries
    1/3 cup hot water
    1/3 cup powdered milk and 3 pkgs. Equal
    1 tsp lemon juice
    1 envelope unflavored gelatin




    Diabetic Cheese Cake Recipe Instructions :
    Soften gelatin in cold water, then add hot water. Blend until smooth.
    Add rest of ingredients and blend again until smooth. Stir in blueberries.
    Chill until firm.



    Diabetic Lemon Cake Pie Recipe Ingredients :

    1 9" baked pie shell
    1/2 cup sugar replacement
    2 tbsp flour
    2 tbsp margarine, soft
    1 tbsp lemon rind
    3 tbsp lemon juice
    1 cup skim milk
    2 eggs, separated




    Diabetic Lemon Cake Pie Recipe Instructions :
    Combine sugar replacement, flour, margarine, lemon rind and juice,
    skim milk, and egg yolks. Beat vigorously. Fold in egg whites (well
    beaten). Pour into unbaked pie shell. Bake at 325 for 1 hr., or until
    set.


    Also, i don't know what type of diabetes your boyfriend has. Have in mind that a cake even with sugar substitute or no sugar still has extra calories, and weight is something he should have under control.
