What to do with 1 lb of ground beef?

    So I bought a pound of ground beef the other day. My thinking was that I would make hamburgers. Now I'm not in much of hamburger mood this week.

    Looking at the panty/freezer. I have

    Corn Flakes
    Various Frozen vegetables
    Brown Rice
    Canned Peas
    Canned Corn
    Fresh Broccoli*
    Refried Beans
    Flour Tortillas
    Various spices/condiments

    I'm not limited to these items. I can stop at the grocery store to pick up anything.
    Of course I could do Tacos, but I already have some fajita meat I plan to cook on Friday.

    Here is what I am thinking.

    Cook up the ground beef, brown rice, peas, and corn. Make some kind of a ground beef stir fry. Not quite sure about that. I am thinking there has to be something I can do with the beef and rice.

    *The Broccoli is getting a bit old. It might be a write off.

    If you have flour tortillas, ground beef & various spices, then I say burritos!!!

    If ya got potatoes , shepards pie . Season rice and meat together and make a stir fry just add veggies . Also maybe a pasta with neat added ( spaghetti and meat balls or something )

    These are called Albondigas. Idk if you have ever heard of them but they are like mexican meatballs. I Dont know if this is how my mom does em but i got em offline. You should give em a try
    This amount feeds 4 people
    ingredients:
    1 / 4 ground beef
    1 egg
    3 tablespoons bread crumbs
    3 tablespoons rice
    3 or 4 tomatoes
    1 garlic
    1 piece of onion
    3 zucchini
    1 serrano chile verde
    salt to taste

    Preparation: Mexican Meatballs

    1 - Mix in a bowl the ground beef, egg, bread crumbs, rice and salt, mix until uniform mixture.

    2 - Form balls of similar size egg (but little round)

    3 - Place in a pot of boiling water for 20 minutes around

    4 .- Place in blender the tomatoes, garlic, onion with a cup of water and blend, the results bring to the boil in a saucepan.

    5 .- I boiled the balls off the heat out of the water and place in pan with tomato sauce, add the chile and cut the squash

    I was going to say either shepherd's pie or burritos. Even if you're doing fajitas later, you could still have a Mexican-type dish of some sort. As a Texan, you're entitled to eat Mexican at least five times a week without facing any judgement. :grin: Speaking of, I'm really wanting to get some Chuy's...

    Homemade vegetable soup with mini meatballs is always tasty. You'd have to go to the store in that case, though.

    Taco pie!

    Brown the beef, and add kidney beans (if you have any). Cook down/drain any juices. Then, use the tortilla shells and place one at the bottom of a small pot, adding the beef/beans as a filling. Stack about 4 or 5 shells. Then, place in the oven at about 350F for about 10-15 minutes. It's really simple, and I love it!

    (I also like to add shredded cheese in between the layers and on the top.)

    EDIT: I just realized this thread was made yesterday. So, it's likely he's already made a decision. xD

    These are to die for. Unfortunately I'm too lazy to cook for myself so I rarely ever have them.

    They are basically tortillas with some taco/spice seasoning for the ground beef and some cheese sauce that gets melted in with the beef and also spread on top. I usually top it with some salsa and occasionally some crushed doritos after baking to give it a little extra crunch.

    I was going to make a meatloaf, but after work the past couple days I've been totally wiped out.

    So I just had a sandwich for dinner. Figure I'll do something tomorrow.

    A few people
    Meat sauce for pasta. If you want to do it fast, just get some regular marinara sauce from the grocery store, brown the beef in a pan, add some Italian seasoning, salt and petter, mix in the sauce and let it cook on low for about 20 minutes. You can't go wrong.

    If you can't use the whole pound at once you can freeze some of it. Maybe freeze half of it for another day. Lots of great ideas above. I like meatloaf with garlic asiago mashed potatoes and carrots for a nice cold weather comfort food meal. I put a few peeled cloves of garlic in the pot while boiling the potatoes and then mash the garlic in a bowl before mashing the potatoes and mix together with butter, warm milk, shredded cheese, seasoned salt etc.

    So what'd u end up making?

    Pfft, you can never have too much mexican in a week.

    Maybe a pasta dish? I take bottled pasta sauce, beef it up, add some veggies, and a healthy serving of garlic powder.

    I ended up going with Chili. It is in the crockpot as I type this. I decided if if I am going to make make chili I might as well make enough for a few meals next week. So I picked up some extra meat.

    This is the recipe I used.

    2lb lean ground beef.
    2 cans chopped green chilis.
    2 cans of Heinz chili tomatos. (Saw them at Wal mart and thought what the hell)
    2 cans kidney beans
    2 cans pinto beans
    2 tsp salt
    1 tsp black pepper.

    Now it has to cook for 10 hours. So will be late tonight, before I get to try it. I really like beans, which is why I added the pinto beans.
