I really want to come out to my three closest friends when I go to visit them this summer. The problem? I don't want to label myself just yet. That in mind, how should I come out to them?

Sit them down, say something to the effect of "hey guys, I want to talk to you about something personal because I trust you guys as my closest friends" and proceed to explain what you're thinking.

Using words like "gay" and "bi" are just 1-word shortcuts for saying "I think I only like the same gender as me" or "I think I like both genders". If you don't want to take the shortcut, then don't! So long as you don't mind explaining how you feel and they're willing to listen, I don't see the problem with doing it that way.
