Definitely Giant (1956). Dimitri Tiomkin did a phenomenal job of creating the atmosphere of western Texas life. I also really enjoyed the score for Ted a lot, because it had a very retro feel to it, which a lot of films don't have nowadays.

O Brother Where Art Thou is hands down my all-time favorite (just endless hillbilly mountain music), Battle Royale (that requiem is what I hear when I have an orgasm), A Clockwork Orange (also what I hear when I have an orgasm), Gone With the Wind, Lawrence of Arabia (more eargsmic pleasures), The Dark Knight, Holes, Empire of the Sun, and every f-cking James Bond Movie.

I know it's a musical, but does Chicago count?

While not an entire score itself, it has been used in lots of films and TV series. John Murphy's Adagio in D minor is a beautiful piece of music that makes me phase out of what is happening on screen and just listen to the music in a little trance like state. It really is wonderful.
