    I recognize french fries, but what is that other thing?

    Mister Sparkles' Frito Pie


    1 large bag of regular sized Fritos
    1 large onion, finely chopped
    4 cans of your favorite brand Chili (or home made chili) (with or without beans)
    1, 8 ounce bag of shredded cheese (any type)


    In a large casserole dish-

    Spray casserole dish with non-stick cooking spray.
    Layer bottom of dish with half of the bag of Fritos.
    Sprinkle half of the chopped onions on the Fritos in the dish.
    Put 2 cans of chili in a microwave bowl, place in microwave for 1 minute to warm up....spread over layer of chips and onion in dish.
    Sprinkle rest of Fritos over chili layer.
    Repeat onions and other 2 cans of chili.
    Sprinkle shredded cheese over entire dish.

    Bake uncovered for 20 minutes at about 300-350 degrees (depending how hot your oven runs).

    Serve with sour cream and/or guacamole.
    Can also serve with Pico De Gallo.

    **you can use more or less of all the ingredients, as you like

    On side note... Whatever it is it looks like chunk of butter in tomato sauce which is rubbing me the wrong way. -> This is about Deviant Attitude's post.

    It is perfection on a plate. A sandwich covered in cheese (and a fried egg if you are into that). Inside this beauty you can find ham, sausages, more cheese and the best part, a big juicy rare steak.
    The sauce is indeed a variation on a tomato sauce. It has a few more ingredients, like beer, Port Wine (the recipe was made by an immigrant from Porto), and whisky. Some people like it spicy, but its not how I do it.
    And of course on the side some fries to dip in the sauce and a cold soda/beer.

    Its one of those things that you feel bad for your body after eating it. Imagine McDonalds, only 10x worse. I love it. And its called "Francesinha"

    Chicken Curry

    Fresh Ingredients
    4 chicken breasts
    2 small onions, 1 chopped, 1 halved and sliced
    1 tomato, peeled, deseeded and chopped
    (Tip: drop the tomato into the stock for 30 seconds to make it easier to remove the skin)
    1 red bell pepper, deseeded and cut into strips
    1 green chilli, deseeded and chopped
    2 cloves of garlic, crushed
    Coriander leaves (Optional)
    2 tsp fresh cream (or crème fraiche)
    Chapatis to serve

    Store Cupboard Ingredients
    1 litre vegetable stock, on the simmer
    4 tbs sunflower oil
    Scant tsp fennel seeds
    Scant tsp chilli powder
    1 tsp turmeric powder
    Pinch of ground ginger
    Large tsp ground coriander
    2 tbsp. tomato purée
    1 tbsp. sunflower oil
    2 tbsp. cashew nut paste
    (soak the cashew nuts and then liquidise with a splash of water)




    Soak the cashew nuts
    In a cup, soak 2 tablespoons of cashew nuts in water. Prepare the vegetables so that they can be added to the frying pans when required.
    Prepare the chicken
    Chop the chicken and add to the boiling stock. Simmer for about 15 minutes. Once cooked, remove and set aside. When the chicken has cooled a little, coat it in the turmeric powder.

    Fry the peppers and onion
    In a frying pan heat two tablespoons of sunflower oil. Add the bell pepper and sliced onion (not the chopped one) and fry until the onions are soft. While this is cooking, start making the onion and tomato masala.

    Make the Onion and Tomato Masala
    Heat two tablespoons of sunflower oil in a large frying pan, karahi pan or wok and once hot add the fennel seeds. Fry for around 30 seconds. Add the chopped onion and cook until the onions are soft and translucent. Add the garlic and fresh chilli and continue frying the mixture until the garlic is cooked but not burnt. Add the pinch of ground ginger and scant teaspoon of chilli powder. Add the 2 tablespoons of tomato purée; fry off for a few seconds; and then add the fresh tomato. Add 2 ladles of vegetable stock. Add the coriander powder. Mix and add more stock (up to 4 ladles). Reduce and add more stock as required. Make the cashew nut paste in a food processor and add it to the masala.
    Add the chicken pieces. Add the onion, pepper mix to the masala. Add 2 ladles of stock. Add the fresh cream and coriander leaves (if using, reserving some for a garnish). Taste, reduce, and add salt if required. Serve with a sprinkling of coriander leaves (if using) and a splash of cream (or crème fraiche) and chapatis.

    Hot and Spicy Chicken Wings

    Chicken wings
    1 tsp Chilli powder
    1 tsp Ground ginger
    1 Fresh red chilli (deseeded and chopped)
    Zest of 1 lime
    3½ tbs honey
    2 tbs Light soy sauce
    Put chilli powder, ginger, fresh chilli and lime zest into a bowl and mix. Add chicken wings and mix together.
    Leave to marinade in fridge for a couple of hours (or leave out for ½ an hour)
    Put chicken wings onto a baking tray with a little oil and cook in a hot oven until cooked.
    Heat wok and add chicken, soy sauce and honey. Cook until sticky. The chicken should go straight from the oven to the wok to stop the juices running out and making the chicken dry.

    Mister Sparkles' Deviled Ham
    (sandwich meat paste)

    3, 5-8 ounce cans of ham (cooked of course)
    3-4 tablespoons of sweet pickle relish
    1/2 teaspoon ground black pepper (I like lots of pepper, you might like less)
    1/2 teaspoon garlic AND onion powder
    1 tablespoon of honey
    4 tablespoons of mayonnaise or "Miracle Whip"

    Drain the juice from the canned ham, place ham in a food processor.
    Add all other ingredients into food processor. Puree until well blended and smooth.
    Place in airtight, plastic container and place in fridge overnight.


    This recipe can be altered for chicken, turkey, beef, and tuna.

    Although I add half of a yellow apple to it if I use tuna, as I like my tuna spread sweet.

    You can make this recipe sweeter, spicier, or however you want it to taste.

    This is really good to make on a Sunday, so you have something to slap on a piece of bread when you dont feel like cooking, or want to take a sandwich with you.

    Also good as "dip" for crackers and corn chips.

    ***all ingredients are variable for your taste.

    How to make fennel tea (jeeravellum)

    Boil big cup of water
    Add fennel seeds (1/2 tsp)
    (for additional flavor, add some sweetener)

    Drink. Rinse and repeat as necessary.

    Lamb over rice is one of my favorite dishes ever! I also like chicken over rice. I get either of those for lunch everyday at school. With a drink it's $5. Really inexpensive and filling :grin:
