I've started growing my hair our recently and I need to tie it back for something and it is not as simple as it seems. Any help or advice would be appreciated thanks?

You could try scrunching your hair up and putting in a hair claw.

There's also ''hair clips that stretch'' that tie it up, and the different designs look quite nice.

When it's in that awkward 'too long yet too short to do anything with' phase, about all you can do is tame it with lots of product and/or use clips, bobby pins, barretts, head bands or a hat. At that point the only goal should be to not look like a mad scientist. You may wish to have your hair shaped about once a month if you want to look good without physically overpowering your hair. just explain to the stylist that you just want to look not-weird but the goal is to eventually put it in a ponytail.
