Holiday recipes

    I love to cook and love to hear about holiday foods from around the world.

    I'll start by posting my Thanksgiving cranberry sauce recipe:

    Ingredients
    2 12-oz bags of fresh cranberries
    12 oz dried apricots, finely chopped
    2 cups sugar
    2 cups cabernet sauvignon
    1 cup apricot nectar
    zest of 1/2 orange

    Directions
    Put sugar, wine, nectar, and zest in a pot and heat on medium until it boils. Add cranberries and apricots and continue to boil on medium-low heat until cranberries pop. Let it cool, transfer it to a container, seal it, and chill it.

    Here's a toutiere recipe from my mom's side of the family. They come from Quebec occasionally and when they visit during the holidays they always bring one to eat on Christmas Eve.

    Even though they do switch it up a bit, this is the recipe my mother has.

    Ingredients:
    1 1/2 pounds of ground pork
    1 onion
    2 cloves of garlic
    1/2 cup of vegetable stock
    2 teaspoons of salt
    2 teaspoons of pepper
    1 teaspoon of thyme
    Pie crust of your choice (anything works for this)

    Put the pork, onion, garlic, stock, salt, pepper and thyme in a saucepan over medium heat. When it starts to boil, simmer it until the meat is cooked. Put the mixture in the pie crust, put on the top crust and pinch the edges to seal it. Pokes holes in the top to let the steam escape and bake it for 40 minutes at 425 degrees F.

    If your a vegetarian like me though, I do have two dips that have always gone over really well for New Years Eve.


    Vegetarian Buffalo Chicken Dip

    Ingredients:
    8 oz of "chicken" (TVP) pieces
    16 oz of cream cheese
    8 oz of bleu cheese dressing
    8 oz of ranch dressing
    12 oz of buffalo sauce
    1 cup of pepper jack cheese
    *I recommend fat-free or low-fat dairy products for obvious reasons

    Put diced "chicken" strips, softened cream cheese, ranch and bleu chees dressings and buffalo sauce in a slow cooker, cooking it on low for about 1 hour and stirring it occasionally. Place the dip in a baking dish and spread cheese on top.

    Hummus

    Ingredients:
    2 cups of chickpeas
    1/4 cup of tahini
    1/4 cup of lemon juice
    3 cloves of garlic
    1 teaspoon of salt
    1 teaspoon of cayenne pepper
    1 tablespoon of olive oil

    Blend all ingredients together in a blender until smooth and serve.

    Dude I just made non-chicken buffalo chicken dip with white beans instead of chicken and it went over very well with vegetarians and non-vegetarians alike

    I found this several years ago on Google (the actual homepage had turkey day recipes from Ina Garten). The cranberry sauce/conserve is always a hit.
