Sometimes casual can lead to romantic. It's kind of a frowned-upon direction. But of course you're quite right (IMHO) to want some proper emotion to go along with that great physical thing. I'd say I agree with your last point: you don't want to regret rejecting her later on. She could be ... well anything.
Do you like her? Why not start dating if she wants to? If not, what's wrong with her? When you wrote dreamy it sounded so nice, like why not see where it goes and enjoy the trip.
